Quasi Quiche

Quasi Quiche


  • 4 eggs, well beaten
  • 1 cup grated cheese of choice
  • 1 Tbsp grated parmesan cheese
  • 3 cups grated zucchini
  • 1/4 cup olive oil
  • 2 green onions, sliced
  • 2 tsp fresh or dried herbs of choice
  • 1 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup flour (any kind)
  • Add additional fillings of choice such as mushrooms, olives, sun-dried tomatoes, etc.


  1. Preheat oven to 350 and lightly grease a cast iron skillet or 9" pie plate.
  2. In a mixing bowl, combine eggs, cheeses, zucchini, olive oil, green onions, herbs, salt, and baking powder and soda and mix throughly until fully combined. Add flour and fold until batter is well mixed. Add additional fillings if desired. Pour into baking dish and bake for 50-60 minutes.
  3. Slice and serve!
