This is your 5 step guide to The ULTIMATE Veggie Sandwich so you can pack in nutrients and colour, and enjoy a nourishing vibrant lunch that will make your co-workers jealous (even from Zoom!). Pick up all the ingredients at your local market and you’ll be making the best healthy sandwiches all week.
1. Start with good bread and fixings from the market.
We all know the best part of a sandwich is the bread, so pick up your favourite loaf at the market to get you started on your sandwich journey. A soft goat cheese, hummus, or a grainy mustard all work perfectly to provide a little moisture and glue to hold everything together!
2. Finely slice all your veggies.
Get chopping all your veggies into thinly sliced pieces. They’ll make it easier to bite without creating a big mess.
3. Season everything
This is the most important step and where most folks go wrong. An unseasoned sandwich is like a salad without dressing. Add a little olive oil, vinegar or lemon juice, and salt and pepper to all your veggies to give them life. Have a delicious pesto sauce in your fridge? Add it here! A little leftover kimchi brine? Perfect!
4. Don’t forget the microgreens.
They provide great flavour and brightness to the sandwich.
5. Pack and wrap like a pro.
Once you’ve packed your veggies in between your bread slices, lay the sandwich on a piece of parchment or wax paper. Bring opposite ends of the paper together and fold it in an inch and repeat until its wrapped around the sandwich. Twist and tuck in the other ends of the paper, and cut the sandwich in half. Enjoy!
Sounds like a super sandwich. I love mashed cooked, then cooled yams on my vege sandwich.
Sounds delicious and I have never tried putting mash yams or sweet potato’s on my veggie sandwiches. Thank you!
