Ingredients

For the sweet version
  • ½ loaf bread (about 1/2 pound), sliced
  • 1 cup milk
  • 3 eggs
  • 1/3 cup brown sugar plus 1 tablespoon
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • Pinch of salt
  • 2 Tbsp butter, cubed
  • ½ cup fruit of choice
For the savoury version
  • ½ loaf bread (about 1/2 pound), sliced
  • 1 cup milk
  • 3 eggs
  • ½ cup breakfast sausage, in bite sized pieces
  • ¼ c onions or leeks, sauteed
  • ½ c cheese, grated
  • Salt and pepper
  • Herbs of choice for garnish

Instructions

For the sweet version
  1. Preheat your oven to 350 and butter a 9-inch pie or cake pan, or a 9-inch square pan. Arrange bread slices evenly in the pan.
  2. In a bowl, whisk together eggs, milk, sugar, cinnamon and vanilla until throughly mixed. Poor mixture overtop of the bread. Ensure all the bread is well soaked, you may need to move the bread around. Sprinkle fruit and tablespoon of sugar overtop evenly. Arrange knobs of butter overtop. At this point, you can cover and put in the fridge overnight to take out and bake in the morning.
  3. Cover with tin foil and bake for 30 minutes covered, then remove tin foil and bake for 15-25 minutes until top is golden. Serve with whipped cream, dusted with icing sugar or with maple syrup.
For the savoury version
  1. Preheat your oven to 350 and butter a 9-inch pie or cake pan, or a 9-inch square pan.
  2. Arrange bread slices evenly in the pan.
  3. In a bowl, whisk together eggs, milk, cheese salt and pepper until throughly mixed. Poor mixture overtop of the bread. Ensure all the bread is well soaked, you may need to move the bread around. Arrange sausage and onions in between the bread slices. At this point, you can cover and put in the fridge overnight to take out and bake in the morning.
  4. Cover with tin foil and bake for 30 minutes covered, then remove tin foil and bake for 15-25 minutes until top is golden. Garnish with herbs and serve.
