Kimchi Gazpacho

Kimchi Gazpacho


  • 2 lbs ripe tomatoes of choice
  • 1 medium cucumber
  • 1 medium bell pepper of choice
  • 1/2 red onion
  • 1/2 cup kimchi plus juice
  • 1/2 jalapeño, seeds removed (optional)
  • 1 garlic clove, minced
  • 1/2 Tbsp salt
  • 1 lime, juiced
  • 2 Tbsp olive oil
  • Pepper to taste


  1. Dice all the veggies and kimchi, and add to a bowl. Set aside 1/2 cup of the chopped veggies for garnish. Add lime juice and salt, then stir and set aside for 20 minutes. (Make sure to wash your hands well if handling a jalapeño!)
  2. Add vegetable mixture to a blender and blend while drizzling in olive oil. Blend until smooth. Taste and adjust seasoning.
  3. Chill for 1 hour and serve with olive oil, pepper, and toast.
