Sweet Potato Chocolate Pudding
Ingredients
- 1 medium sweet potato, boiled
- 1 cup full fat coconut milk
- 1/4 cup cocoa
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- Pinch salt
Instructions
- Blend all ingredients in a blender until fully smooth, approximately 2 minutes. Make sure to stop the blender to scrap down half way through.
- Store in a fridge for up to 4 days. Serve chilled with coconut whip and chocolate shavings or toasted nuts.

To get 1 cup coconut milk, did you open a can of coconut milk and then blend the solid fat and liquid coconut water together? I usually use recipes that call for the whole can, so curious how you measure out 1 cup. Thanks!
