Sweet Potato Chocolate Pudding

Ingredients

  • 1 medium sweet potato, boiled
  • 1 cup full fat coconut milk
  • 1/4 cup cocoa
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • Pinch salt

Instructions

  1. Blend all ingredients in a blender until fully smooth, approximately 2 minutes. Make sure to stop the blender to scrap down half way through.
  2. Store in a fridge for up to 4 days. Serve chilled with coconut whip and chocolate shavings or toasted nuts.
