To celebrate St. Patrick’s Day, we’ve simplified this boozy chocolate cake with an easy one-bowl method. Pick up a stout beer at your local farmers’ market to be the star of this show and to enjoy for this holiday.

One Bowl Chocolate Stout Cake

Ingredients

For the cake
  • 1 ¼ cup all-purpose flour
  • 1 cup white sugar
  • ¾ cup cocoa powder
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1/3 cup butter, melted
  • 2 eggs
  • 1 ¼ cup stout
  • 1 tsp vanilla extract
For the whipped cream
  • 1 ½ cup 35% whipping cream
  • cup icing sugar
  • 1 Tbsp whiskey or rum
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350. Line a 9" cake pan with a circle of parchment paper on the bottom, and grease the sides with butter or oil. Set aside.
  2. In a large bowl, combine sugar, cocoa, baking soda and powder, salt, eggs, stout, butter and vanilla. Whisk until thoroughly combined, the stout will cause it to foam but continue mixing. You can not over mix at this stage.
  3. Sift in flour and fold until combined, try not to over mix once your flour is added. Pour batter into cake pan and bake for 28-30 minutes or when a toothpick comes out clean when inserted into the centre. Allow to fully cool.
  4. To make whipped cream, beat cream with a hand mixer on high until stiff peaks form. Add in icing sugar, whiskey and vanilla, and beat until well combined. Dollop on top of cooled cake and created swirls with the back of a spoon. Garnish with chocolate shavings if desired.
